Abstract : This study was carried out to assess the extent of complying the governmental school canteens in Jeddah city with the hygienic requirements and the Good Hygiene Practices (GHP) in both the school canteens and the company responsible of production of the meals. Meals were also evaluated for their safety and nutritional values. Results showed that, the assessment rate of the compliance with regulations (75.9٪) reflected compliance of the school canteens with the hygienic requirements in ancceptable way, and assessment of the school meals production plants reflected the commitment of the plant to the hygienic requirements and GHP. Concerning the safety for consumption, microbiological examination of the meals showed that all examined samples were completely free from microbial contamination which reflects the proper application of good hygiene practices during the preparation and handling of the meals. Results also showed that the highest detectable level of lead in canteen meals was 9.2 ± 6.24 μg / meal and this represents only 1.36٪ of the Tolerable Weekly Intake (TWI) of lead for primary school students and 0.64٪ for preparatory and secondary school students which can be considered as a safe level does not pose any risk even if the student consumed more than one meal a day. Additionally, the TWI of cadmium in studied meals ranged between 2.84٪ - 6٪ which can also be considered as a safe level and poses no risk. Concerning the nutritional value of the canteens meals, the iron levels ranged between 0.7 ± 0.2 mg / meal, and 1.4 ± 0.47 mg / meal, representing only 4.6٪ and 9.3٪ of the daily requirement for females in high school, while calcium levels ranged between 21 ± 15.9 mg / meal, and 50.4 ± 21.8 mg/meal, representing 2.6٪ and 3.9٪ of the daily requirement for primary school students of both sexes, and the level of zinc in the studied meals represented 20٪ - 32.5٪ of male and female students at the elementary level and between 14.5٪ -25.5٪ of the males and 17.7 - 31.0 for female in middle and high schools, respectively. The fat content in the meals ranged between 4.4٪ and 16.3٪ and the total calories from meals ranged between 283-409 calories/meal, and these values may increase if students consume more than one meal during the school day.
